Mom's Quick + Easy Tortilla Soup






My family has always been really big into traditions. For as long as I can remember, we’ve celebrated Halloween with my entire family, enjoyed a big bowl of my mom’s tortilla soup + appetizers and then gone trick-or-treating. Even as we got older, these traditions never changed and they’re definitely something that I plan to carry on with my own family.


If you’re trying to plan what you’re going to make/bring to your Halloween party next week, this tortilla soup recipe is the perfect thing to make. No one likes to cook while trying to enjoy their company and that’s why I love this recipe so much – all you need to do is throw the ingredients in the pot and let it cook for about a half an hour! It’s so hearty, flavorful and incredibly easy to make!


What You’ll Need


Whole Large Rotisserie Chicken

1 (32 oz) Container of Chicken Broth

2 Cups of Water

2 Cans of Diced Tomato

½ Bunch of Cilantro – Finely Chopped

½ Large White Onion – Finely Chopped

1 Tsp. Lime Juice

1 Tsp. Ground Cumin

Salt/Pepper


Sides/Toppings


Shredded Cheddar Cheese

Tortilla Chips

Sour Cream

Preferred Hot Sauce (We usually use Cholula Tabasco)


Instructions


1. In a large soup pot, combine all ingredients. Bring to a boil and then allow it to simmer for 30 minutes or until steaming.

2. Garnish with toppings + serve.
