It's Monday, the perfect day to get back into that healthy eating you may not have done so great at over the weekend! This kale salad is probably one of my favorite things to eat right now! It's got the perfect mix of lemon and pepper, plus it's so easy to make! You can also double or even triple the dressing recipe and store in an airtight container in the fridge to use for the rest of the week!
3 Cups Fresh Kale
1/2 Cups of Croutons
1/4 Cup Shredded Parmesan
1-2 Grilled Chicken Breasts
For the Dressing:
3 Tablespoons of Olive Oil
4-5 Tablespoons of Lemon Juice
1/2 Teaspoon of Garlic
Salt + Pepper
Red Pepper Flakes
Wash kale and place in a large salad bowl or serving dish.
In a small bowl, whisk together all of the ingredients for the dressing + set aside.
Pour croutons into a small ziplock and use a rolling pin or spoon to smash into crumbs.
Add kale, croutons, parmesan cheese and chicken breasts to the salad bowl, add dressing and enjoy!
